Almost every time, I see kitchen cabinets and fridge LOADED with foods that people think are “healthy” (or have been deceived by clever food labels into believing are healthy), but in reality are fat-storing traps in disguise.
Recently a physical checkup was shocking: Even while eating foods rich in saturated fat and a seemingly more indulgent diet, my total cholesterol was down 10 points. But, the “bad” LDL cholesterol was stellar, and the “good” HDL was the highest it’s ever been. And guess what: I hadn’t gained any weight! How was that possible?
The fat-free craze of the ’80s and ’90s is failing. The idea of cutting fat from our diets would trim inches from our figures wasn’t working. The opposite happened. Because fat-free cookies, cheese, chips, and crackers were missing the critical fat that makes us feel full, we ate more than the usual portion. And while producers added extra sugar into these foods making them taste better, we devoured as many calories and oftentimes many more. The low-fat message backfired, leading to many products loaded with sugar, refined carbohydrates, and calories.
Now advice about fat has shifted from “Eat less fat” to “Eat the right fats”. We see fats now as “good” and “bad” fats. The good fats are unsaturated fats: monounsaturateds (MUFAs), found in foods like olive oil and avocados, and polyunsaturateds (PUFAs), found in sunflower and corn oils and the omega-3s in salmon and walnuts. These types have been shown to lower blood cholesterol and the risk for heart disease.
Saturated Fat, Not the Villain.
After decades of bashing saturated fat, the medical community was stunned by a 2010 study in the American Journal of Clinical Nutrition. Scientists discovered there wasn’t enough proof to link saturated fat to either heart disease or stroke. The 2010 analysis, however, was so big and so thorough — employing 21 studies and almost 350,000 people — it captured medical science attention. People had just assumed the evidence against saturated fat was strong. Researchers discovered cutting out saturated fat didn’t make much difference. Until you considered what people ate in place of it.
